I am have been spending more time in the kitchen and I love a great crock-pot recipe. I am looking for fresh, easy, and delish! I haven't had a lot of exposure to stuffed peppers in my life -- so I thought I would give it a whirl and they came out really, really good.
This was adapted from the Weight Watcher's Slow Cook It cookbook available at WW centers in most areas.
Ingredients:
1/2 Cup Quinoa
1 (15 ounce) can of black beans, rinsed and drained
2 cups coarsely chopped kale
1 cup fresh or thawed frozen corn
1/2 cup reduced fat feta cheese
2 green onions, chopped
1 - 1/2 teaspoon of ground cumin
1 (14- 1/2 ounces) can of diced tomatoes with jalapenos
1/2 cup + 4 tablespoons fat-free green salsa
4 large red, or yellow or orange bell peppers
1. To make the filling, cook the quinoa according to package directions. Drain. Transfer to large bowl and let cool slightly, about 10 minutes.
Quinoa (KEEN-wah) contains more protein than any other grain. It is also considered a complete protein because it contains all eight essential amino acids. It is also lower in carbohydrates than more grains.
2. Stir in the beans, kale, corn, feta, green onions, cumin, 1/4 cup of the tomatores, 2 tablespoons of the salsas.
(This mixture as is -- it so so so so good. As a salad, as a snack. Yum.)
3. Spoon filling evenly into bell peppers. Put peppers in a 5 - 6 quart slow cooker. Combine remaining tomato miuxture and 1/2 cup salsa in a small bowl.
Spoon tomato mixture over and around the peppers.
Cover and cook until peppers are fork-tender, 2-3 hours on hight or 4-6 on low.
Each serving is 1 stuffed pepper with 1/4 cup sauce -- 318 calories, 3 grams of fat, 16 grams of fiber. 6 points value.
Here is a photo of the peppers in the pot. The plated pepper photo did not come out so well.
We only made two -- saved 1/2 the quinoa mixture to eat as a cool salad. Did I mention how great the salad was?
